No pesticides or chemical fertilisers are used in these organic wheat farms. The quality of good pasta is determined by two factors: extrusion and dying methods. Our pasta is forced through old fashioned cooper moulds rather than the Teflon ones. Thus our pasta has ridges or slight abrasions on its surface, to hold and absorb the pasta sauce better. It is then dried slowly, up to fifty hours at a low temperature. Our slow-dried pasta gives you a much better mouth-feel, fuller taste, quicker cooking time and excellent grip on pasta sauce. By applying this old-world Italian craftsmanship, our pasta has higher gluten strength, better texture, deeper character and richer flavour.
